Berry Breakfast Puff
Here's a entertaining recipe that would be fun to serve for breakfast or brunch this long weekend - or any weekend! A favourite recipe of Ontario egg farmers Bill and Linda Lamont of Mt. Brydges, this oven-baked Berry Breakfast Puff does exactly what its name implies - puffs up in rather dramatic style while baking. In the photo, the Puff has fallen a little which it will naturally do when it comes out of the oven and gets loaded up with berries. Made with basic ingredients like eggs, flour, milk and sugar, it's the eggs in it that give the Puff its height. Eggs have a natural ability to make things rise (think cakes and souffles!) and they do a good great job of that in this recipe! Once you pull the Puff out of the oven, immediately sprinkle the Puff's "hills and valleys" with icing sugar, spoon seasonal berries on top (another time, try other fruit of your choice like peaches or apples sauteed in maple syrup - yum!), then give it another sprinkle of icing sugar.
