Salad

  • 500 ml spinach
  • 8 asparagus stalks, blanched
  • 3 vine tomatoes, sliced into ¼-inch (5 mm) rounds
  • 1 ball (125 g) fresh mozzarella, torn
  • 1 small avocado, sliced
  • 4 eggs, hard–cooked, peeled and sliced
  • 125 ml basil leaves, torn

Dressing

  • 60 ml olive oil
  • 45 ml red wine vinegar
  • 15 ml finely minced shallots
  • 10 ml pure maple syrup
  • 5 ml honey Dijon mustard
  • salt and pepper to taste
Fresh leafy greens, asparagus, mozzarella and poached eggs create a beautiful and healthy meal - for lunch or dinner. The sweet Dijon dressing takes it to the next level!

Instructions

Dressing: In a small bowl, whisk together olive oil, vinegar, shallots, maple syrup, and mustard. Season with salt and pepper.

Salad: On large platter, arrange spinach, asparagus, tomatoes, mozzarella and avocado. Top with egg slices. Scatter basil leaves. Drizzle dressing and lightly toss to combine.
