  • 250 ml sliced white button mushrooms
  • 60 ml sliced chives
  • 125 ml finely diced red pepper
  • 1 ml each salt and pepper
  • 1 ml garlic powder
  • 12 strips turkey bacon
  • 12 eggs
These easy and charming bites make for a great breakfast option that will help keep you feeling full and satisfied for the whole date. These can be used as a grab-and-go option or a leisurely weekend brunch item.

Instructions

Preheat oven to 350°F (175°C). In a medium bow, stir together mushrooms, chives, red pepper, salt, pepper and garlic powder.

Line each greased muffin tin cup with turkey bacon slices and place a heaping tablespoon of the veggie mixture in the bottom of each cup. Place in the oven and bake for 10 minutes.

Remove from the oven and crack one egg into each muffin cup until all 12 eggs have been used. Return the tray to the oven and cook for another 15 minutes. Reserve some extra sliced chives to sprinkle on top and enjoy right away.
