Cranberry Oatmeal Cookies

Cranberry Oatmeal Cookies Makes 4 dozen 1 cup unsalted butter 1-1/4 cups packed brown sugar 1/2 cup granulated sugar 2 eggs 2 tsp vanilla extract 2 tbsp milk 2 cups rolled oats 2 cups all-purpose flour 1 tsp baking soda 1 tsp ground cinnamon 1/2 tsp salt 2 cups dried cranberries In a medium bowl, beat together butter and sugars until well blended and fluffy. Beat in eggs, vanilla and milk. In another bowl, combine oats, flour, baking soda, cinnamon and salt. Add dry ingredients to butter mixture; stir until just combined. Stir in cranberries. Divide dough in half and place on sheets of parchment paper. Roll each half into a log about 1-1/2 inches in diameter. Chill for an hour or freeze until ready to use. When ready to bake, preheat oven to 350F. Cut the logs into 1/2-inch thick slices and place on a parchment-lined baking sheet. Bake until cookies are golden brown, 12 to 14 minutes.
